Lemon Chicken - Recipe

My new favourite chicken meal?


I'm going to start off by saying I was very nervous about making this recipe, since my last few Dukan-attempts for the Julie and Julia Project have turned out less-than-yummy.

I will tell you right now, this was really delicious. I'm sad it didn't make more and will make it later this week because... yummy!

This was my first time stir frying chicken with anything. Opened a door for me I think :P Going to try more stir frying now.

INGREDIENTS

1 lbs 5 ounces boneless, skinless chicken breasts (I just used 2 whole chicken breasts)
1 medium yellow onion, sliced
2 cloves garlic, chopped
1/2 tablespoon finely chopped fresh ginger
Juice and zest from 2 lemons
2 tbsp soy sauce
1/2 cup + 2 tbsp water
2 bay leaves
1 pinch cinnamon
1 pinch ground ginger

Cut the meat into 1-inch cubes.

Heat a large nonstick pan with a lid over medium heat. Add the onion, garlic, and ginger to cook, covered, for 3 to 4 minutes.

Now I was a little confused by "slicing" the onion. I was like... you mean chunk-up the onion or like... round slices? I sliced it in round pucks and separated the rounds from each other... if that makes sense.
The end result was perfect. I did it right, score!

Browning the chicken with the onions, ginger, garlic.


Turn the heat to high, uncover the pan, add the chicken, and stir continuously for 2 minutes with a spatula until brown.

Now reduce the heat. Don't wait until you add the other ingredients. The soy sauce and water boiled when I did it and sprayed everywhere.


Smells good!


Add the lemon juice, soy sauce, and water.

Add the bay leaves, cinnamon, ground ginger and lemon zest.

Season with salt and pepper to taste and simmer, covered, for 30 minutes. Serve hot.

I really enjoyed this lemon chicken! (Found on page 198) I am a believer in the cookbook section of the Dukan Diet again!
